Beef Recipe – Secrets to a Delicious One Pot Easy Roast Recipe

Beef recipes are really wonderful. I have been cooking one pot easy roast meals since my kids were small and one of the secrets to a really easy and hassle-free cooking is the cookware I used.

Ever since, I always use a thick-bottomed cast iron pot and always have it covered all through the cooking process. Today, I can also cook one pot easy roast recipes in the oven using my enameled cast iron Dutch oven with a surface that's large enough to hold the beef roast, vegetables and everything else that I wish to include in my recipe. My next secret is buying only tough cuts of well-marbled beef, like a shoulder roast or chuck roast, and take time with slow cooking over low heat. Using only low heat while slow cooking guarantees tender and flavorful beef roast that's so enjoyable to savor.

The recipe below is our favorite one pot easy roast beef recipe until now. The half cup of liquid will provide moist to the food while slow-cooked over very low heat in a tight lid.

Ingredients

  • 3 to 4 lbs of beef shoulder or boneless chuck roast
  • 2 cups mixed fresh vegetables, cut lengthwise
  • 1 tablespoon olive oil, or any organic oil
  • 1 large onion, flaked
  • 5 cloves of garlic, peeled and crushed
  • ½ cup of red wine, or dark beer
  • ½ cup of water
  • ½ teaspoon pepper
  • Salt to taste
  • Any beef seasoning to taste

Directions

Rub the salt, pepper and beef seasoning thoroughly all over the meat. In a Dutch oven, heat the oil on a medium high heat then brown the roast for several minutes. Flip the meat after one side has turned a perfect brown. Don't move the roast while a side is browning or it will not brown well. Lift up the meat and put the garlic and onion onto the bottom so the roast sits on top of the ingredients. Pour in the wine and water then cover. Bring to a rapid boil then adjust the heat to lowest for simmering. Cook for 4 hours. By this time the meat should be tender. Add the mixed vegetables and continue cooking for 5 to 10 minutes. Lessen the time if you wish for crunchier veggies. For a variation, you can side your beef roast with mashed potatoes and gravy from the drippings, instead of the veggies.
