Healthy Dinner Recipes – Discover a Recipe to Create a Special Healthy Dinner With Little Effort

Especially in winter, there's no better dinner than a nice hot soup. Soups make great dinners because many of them are easy to prepare and you can use almost anything in your fridge and pantry. If your kitchen is well organized, then you will always have something to make a nice healthy soup.

But sometimes, you want something special. Cream soups are great. But they are high in fat and a bit heavy. Is that really healthy? Well, every once in a while it won't do you harm. But if you are worried about calories, try this:

Creamy Vegetable Soup with Whole Grain Rolls

Ingredients for four servings

  • 1 tbsp. olive or canola oil
  • 1 small onion, chopped
  • 2 garlic cloves, crushed
  • 350 g vegetables (one kind or mixed)
  • 700 ml chicken, beef or vegetable stock
  • 100 ml low fat milk
  • spices of your choice

Steps

  1. Heat the oil in a large pot and fry onion and garlic until golden.
  2. Then add the vegetables and roast briefly. Add the stock and allow simmering for about 10-15 minutes until the vegetables are soft.
  3. Puree the soup with a stick blender, mix in 100 ml of low fat milk and season.
  4. Serve with whole grain rolls or toast.

This healthy dinner recipe contains much less fat than an original cream soup. The oil you use is the healthiest vegetable oil you can get, and the cream is replaced by low fat milk. It gives the soup a creamy texture without loading it with calories. Even full cream milk would already make a big difference to cream.

In addition to reducing the fat calories, the recipe also makes sure you won't get too many carbohydrate calories. It uses whole grains instead of refined white bread, meaning complex instead of simple carbohydrates. These are great for diabetics and overweight people because they don't cause heavy blood sugar fluctuations and are very unlikely to be stored as fat. Also, they fill you much quicker and for longer than the refined versions, preventing overeating and sudden hunger attacks whilst giving you lasting energy.

All in all, a recipe that frees you from your calorie worries and allows you to simply enjoy.
