Creamy Vegetable Soup with Whole Grain Rolls

Ingredients for four servings

  • 1 tbsp. olive or canola oil
  • 1 small onion, chopped
  • 2 garlic cloves, crushed
  • 350 g vegetables (one kind or mixed)
  • 700 ml chicken, beef or vegetable stock
  • 100 ml low fat milk
  • spices of your choice


  1. Heat the oil in a large pot and fry onion and garlic until golden.
  2. Then add the vegetables and roast briefly. Add the stock and allow simmering for about 10-15 minutes until the vegetables are soft.
  3. Puree the soup with a stick blender, mix in 100 ml of low fat milk and season.
  4. Serve with whole grain rolls or toast.

This healthy dinner recipe contains much less fat than an original cream soup. The oil you use is the healthiest vegetable oil you can get, and the cream is replaced by low fat milk. It gives the soup a creamy texture without loading it with calories. Even full cream milk would already make a big difference to cream.
