Creamed Cabbage Soup Recipe

Cabbage is an inexpensive vegetable that is available all year long and great for health. Nutritionists often recommend cabbage soups for people who are willing to lose weight. It is full of Vitamin K and C with some amount of fiber in it. Hot creamed cabbage soup served during a chilly winter dinner is just awesome! Here is the simple recipe of a delicious cabbage soup.

Ingredients for Creamed Cabbage Soup
Chicken broth - 2 cups
One medium diced onion
Diced celery - 1 cup
One medium head (shredded) cabbage
1 diced carrot
Margarine or butter - 1/4 cup
All-purpose flour - 3 tablespoons
Milk - 1 cup
Light cream - 2 cups
Diced ham -2 cups - fully cooked
Salt - 1 and 1/2 teaspoons
Pepper - 1/4 teaspoon
Dried thyme - 1/2 teaspoon
Chopped parsley - fresh

Directions

Take a large kettle and mix the chicken broth and all the vegetables. Cover it with a lid and let it simmer until all the vegetables become soft. It will take around 20 minutes to boil. Take a saucepan, first melt some butter in it, put some flour and stir it well. Slowly add some milk and cream in that butter mixture; cook and stir so that no lump forms. Cook the entire mixture until it is thickened. Put the vegetable mixture into that thickened butter mixture. Add the other ingredients ham, pepper, salt and thyme; Cook the entire soup well so that all the ingredients blend well with each other. Serve it hot after garnishing with freshly chopped parsley.

To make it tastier you can add kielbasa in place of ham and add some more carrot. To spice it up a more you can add some herbes de provence, a sprinkle of smoked paprika or cajun seasoning according to your taste. It tastes yummy!
