Comfort Food – Easy Homemade Mac and Cheese
Macaroni and cheese is classic comfort food. There are lots of different recipes for macaroni and cheese from simple to fancy. Some are made on the stove top and others baked in the oven so they get a crispy crust.
Homemade macaroni and cheese is so much better than the stuff from the box and it is easy to make. One taste of this easy homemade made and cheese and you will be a convert.
The secret ingredient in this version is cottage cheese, which has less fat and more protein than many other kinds of cheese. You give it a buzz in the food processor to give it a creamier consistency.
Macaroni and Cheese
Makes 6 servings
8 ounces elbow macaroni, uncooked
2 tablespoons butter, melted
2 cups shredded sharp Cheddar cheese
1/2 teaspoon freshly ground black pepper
2 cups cottage cheese
1/2 cup milk
1/4 cup seasoned bread crumbs
1/4 cup Parmesan cheese, shredded
Preheat oven to 350°F. Coat a medium baking dish with cooking spray and set aside. Cook macaroni according to package directions until firm, but don’t overcook it. Drain macaroni and set aside.
In a large bowl, combine macaroni, cheddar cheese, and black pepper. Place cottage cheese and milk in a blender or food processor and blend until smooth. Pour this over macaroni mixture and mix thoroughly.
Pour entire mixture into baking dish. In a small bowl, combine bread crumbs and Parmesan cheese. Sprinkle on top of the macaroni. Bake for about 30 minutes, or until hot in the center. Serve warm.
