3 Tasty Make-Ahead Campfire Meals For The Whole Family

You don't have to stick to hot dogs and beef jerky when you're out camping, especially when you're with family. Amazing Fried Pizza

What you need:

  • 1 package pizza dough
  • 2 cups tomato sauce
  • 2 cups grated mozzarella cheese
  • 1 cup pesto
  • Parmesan cheese, for topping
  • Fresh basil, for topping
  • Red pepper flakes
  • Canola oil for frying

Prepare pizza dough according to package instructions then divide into 6 equal pieces. Roll each piece into a ball and flatten into a pizza shape (about 1/2-inch thick and 6 to 8 inches in diameter). Heat about 1 inch deep of canola oil in a large pan over medium-high heat then one by one, fry the pizza doughs until they're light golden brown in color, about 30 seconds to 1 minute per side. Allow to cool then spread each dough with tomato sauce and sprinkle with mozzarella (add more if desired). Cook on a pre-heated oven (450F) until cheese has melted, about 5 minutes. Top with pesto, parmesan and fresh basil. Sprinkle with red pepper flakes.

Ham and Hash Foil Packets

What you need:

  • 1 package shredded hash browns, frozen
  • 1 1/2 cups chopped smoked ham
  • 1 1/2 cups shredded sharp cheddar cheese
  • 3 tablespoons olive oil
  • 2 tablespoons chopped fresh chives
  • Kosher salt and ground black pepper to taste

In a large bowl, mix together shredded hash browns, smoked ham and olive oil. Season with kosher salt and ground black pepper. Prepare 6 sheets of heavy duty aluminum foil (at least 12 inches long) and brush each lightly with olive oil. Divide the hash brown mixture between the foils. Fold all sides of each to create a packet. Bake packets in a pre-heated oven (400F) until heated through and cheese has melted, about 20 to 25 minutes. Allow to cool for a few minutes before eating or packing for camp. Garnish with fresh chives when ready to eat at camp.
