Asian-Style Pork Chops with Rice Pilaf

Recipe Serves 4 | Prep Time 15 min | Marinate 180 min | Cook 20 min

Ingredients

  • 1 envelope Savory Herb with Garlic Soup Mix
  • 1/3 cup soy sauce
  • 3 Tbsp. honey
  • 3 Tbsp. lime juice
  • 1 tsp. grated fresh ginger (optional)
  • 4 pork chops, 1-inch thick
  • 1 package Rice Sides-Rice Pilaf, prepared according to package directions

Directions

  1. Create the marinade by combining the Savory Herb Garlic Soup Mix, soy sauce, honey, lime juice and ginger, then pour half of it over the pork chops in a pan. Cover the pork and allow to marinade in the fridge between three to twenty-four hours.
  2. Discard any excess marinade and grill the pork chops until they are fully cooked through. Serve with Rice Pilaf

Baja Chicken with Chipotle Rice & Avocado-Corn Salsa

Recipe Serves 4 | Prep Time 15 min | Marinate 15 min | Cook 15 min

Ingredients

  • 3 Tbsp. lime juice
  • 3 Tbsp. vegetable oil
  • 1 clove garlic, finely chopped
  • 4 Tbsp. chopped fresh cilantro, divided
  • 1 Chicken flavored Bouillon cube, crumbled
  • 1 lb. boneless, skinless chicken breasts, pounded to 1/2- inch-thick
  • 1 ½ cups thawed frozen whole kernel corn
  • 1 large tomato, chopped
  • 2 large avocado, peeled and cubed
  • 1 package Rice Sides- Creamy Chipotle, prepared according to package

Directions

  1. Whisk together the lime juice, oil, garlic and three tablespoons of the cilantro.
  2. Add the Chicken Bouillon to ¼ cup of the garlic mixture and pour over the chicken evenly. Refrigerate for at least fifteen minutes.
  3. In the meantime, create the Avocado-Corn Salsa by combining the corn, tomato, avocado and leftover garlic mixture. Season the salad with salt and pepper to taste.
  4. After removing any excess marinade, grill the chicken until it is fully cooked, then serve with the Rice Sides and salsa.

Tip* This dinner recipe screams of Tex-Mex and would go well with a spoonful of fresh guacamole.

BBQ Shrimp

Recipe Serves 4 | Prep Time 10 min | Marinate 30 min | Cook 15 min

Ingredients

  • 1 tub Homestyle Chicken Stock
  • 2 Tbsp. pure maple syrup [or pancake syrup]
  • 1 Tbsp. whole grain mustard
  • 1 clove garlic, finely chopped
  • 1 tsp. apple cider vinegar
  • 1 ½ lbs. uncooked medium shrimp, peeled and deveined

Directions

  1. Combine all of the ingredients, including the shrimp. Cover and marinate in the fridge for at least 30 minutes.
  2. Discard excess marinade, then thread the shrimp onto skewers and grill until they turn pink. Serve over hot rice, garnished with fresh herbs and lemon.

Tip* This recipe for dinner can easily be converted into tacos by serving the shrimp in tortillas rather than with rice.
