1. Classic Herb Pasta Sauce

What you need:

  • 1 medium egg
  • 1 cup chicken broth
  • 1/2 cup mushrooms
  • 1/2 cup heavy cream
  • 1/2 cup white wine
  • 1/4 cup butter
  • 2 tablespoons all-purpose flour
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon crushed dried herbs

Whisk egg and heavy cream in a bowl then set aside. In a skillet, melt the butter over medium-high heat. Cook mushrooms until browned then stir in flour, Italian seasoning, salt and dried herbs. What you need:

  • 2 cloves garlic, minced
  • 1 cup fresh spinach leaves
  • 1 cup fresh flat-leaf parsley leaves
  • 1 cup fresh basil leaves
  • 1/2 cup chopped fresh oregano
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup toasted pine nuts
  • 3/4 cup olive oil
  • Salt and ground black pepper to taste

Place all ingredients in a blender or food processor then process until smooth. Use as a dip or sauce for pasta or cooked meat.
